Recipes (not just for Dada and Wangi)

Dadaist:

Spicy scrambled eggs - Madhur Jaffrey

3 tbsp butter/veg oil
1 small onion finely chopped
1/2 tsp peeled grated ginger
1/2-1 green chilli finely chopped (have used red, works just as well)
1 tbsp chopped coriander
1/8 tsp turmeric
1/2 tsp ground cumin
1 small tomato peeled and chopped (often use puree instead if in hurry)
6 large eggs, beaten
Salt and pepper to taste

Sauté onion till soft, add ginger, chilli, green coriander, turmeric, cumin & tomato, stir and cook for 3-4 mins. Then add eggs and cook to consistency you like, stirring gently.

Wangi:

Courgette Cake - Nigella

60g raisins, optional
2-3 courgettes (250g), wiped then grated
2 large eggs
125ml veg oil
150g caster sugar
225g self raising flour
1/2 tsp bicarb
1/2 tsp baking powder

Put grated courgettes in sieve to drain some of water. Beat eggs, oil and sugar until creamy, sift in flour, bicarb and baking powder. Beat until mixed, add courgettes and raisins if using. Bake in two tins for 30 mins or one tin (I'm too lazy to line two) for about 40 mins on 180C gas mark 4. I fill it with home made lime curd (ask if you want recipe) but you can use bought lime or lemon curd, and Nigella ices it but I don't.

Bob: Healthy veggy suggestion

Vegetable moussaka - Sarah Brown

2oz/50g green or brown lentils (I use Le Puy from Kitcheners)
1 pint water
4 tbsp oil, pref olive
1 chopped onion
1 clove garlic crushed
1/4 lb/ 110g mushrooms, wiped & chopped
2-3 tbsp tomato purée
2 tsp dried oregano
1 tsp grated nutmeg
salt and pepper
12oz/350g/2 medium aubergines, sliced (up to you whether you sweat them...I don't)
2 potatoes (I usually leave out), boiled and sliced
2 tomatoes, thickly sliced

Sauce:
3/4 oz/20g butter
1 tbsp flour
8fl oz/225ml milk
1 small egg
1/2 tsp mustard powder
salt and pepper
3oz/75g cheddar, grated

Bring lentils to boil in the water then cover and simmer for 40-45 mins. Drain and reserve liquid. HEat 2 tbsp oil and fry onion and garlic gently, then add mushrooms and lentils and cook for further few minutes, mixing well. Remove from pan with slotted spoon leaving as much oil as poss in pan, put in bowl and mix in little of lentil liquid, tomato puree and oregano. Season well with nutmeg, salt and pepper.
Add more oil to pan and fry aubergine slices then drain on kitchen paper.
Grease 3 pint oven proof dish and put in the lentil/mushroom mix, then a layer of aubergines, then a layer of potato and tomato slices.
Make white sauce - make a roux of better and flour, cook for about three minutes, then ad milk and bring to boil stirring constantly, simmer for five minutes and then allow to cool. Beat in the egg, season with salt pepper and mustard powder and pour over casserole, sprinkle with the cheese then cook at 180C/gas mark 4 for 40 mins.

Well, I'll let people share it, but they're the people I promised recipes to months ago! In fact Dadaist didn't exist when i promised him that recipe :oops: ...

Ecm asked me for the recipe for the venison casserole I made on Saturday and suggested we should resurrect this thread so here we go:
